Chia Seeds are marvelous source of nutrition
- Great Source of Fatty Acids (FA): Research has shown that chia seeds have about 30% oil and possess the highest percentage of the polyunsaturated fatty acids, -linolenic and linoleic (~83%), of all crops.
- Essential FAs: Remember, -linolenic fatty acid is an unsaturated -3 fatty acid. Polyunsaturated fatty acids like -linolenic are very important to human nutrition, but they must be supplied in food since they cannot be synthesized in the body. Oils containing a high amount of -3 fatty acids in the diet have been shown to support good cardiovascular health. High levels of ALA is good as seen from the 1995 research report funded by the Australian National Health and Medical Research Council showing that a higher content of -linolenic acid in the diet increased the EPA content in human tissues in a predictable manner.
- Protein-Rich: Chia seed possesses about 20% protein! This percentage compares favorably with other nutritional grains such as wheat (14%), corn (14%), rice (8%), oats (15%), barley (9%), and amaranth (15%). Unlike other grains, however, chia protein contain a wide range of amino acids.
- Vitamin and Mineral Source: Chia seed is a good source of B vitamins and minerals calcium, phosphorus, potasium, zinc, and copper.
- Not to Worry about Rancidity: A major concern of plant-derived EFAs is the tendency to become rancid and hence toxic to the physiology. Research shows chia seeds possess a strong antioxidizing activity. Thus, oxidation in chia is essentially non-existant compared to other -linolenic fatty acid sources such as flax, which exhibit rapid decomposition due to a lack of antioxidants. Flax also contains toxic cyanoglycosides and a vitamin B6 antagonist compounds.
